I made these two recipes for the Superbowl. It was great for a group, but if it were just the two of us, I'd have to half it for sure, and I'd still have plenty leftover to freeze!

  • 2 pounds lean ground beef
  • 1 (46 fluid ounce) can tomato juice
  • 1 (29 ounce) can tomato sauce
  • 1 1/2 cups chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chili powder
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon white sugar
  • 1/8 teaspoon ground cayenne pepper
  • 2 cups canned red beans, drained and rinsed
Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside. Add all ingredients to a large kettle. Bring to boil. Reduce heat and simmer for 1 to 1 1/2 hours, stirring occasionally.

I accidentally bought whole tomatoes instead of the 29-ounce can of sauce. I used 16 oz. of the sauce I had on hand, and then added a can of crushed tomatoes with diced chiles.  I used a whole green pepper, and 3 cans of kidney beans. I also didn't have enough regular chili powder, like I thought, so about half of it was an Habenero and Adobo blend that I had in the house. I also added a lot more cumin, maybe 4 tsps instead.

Buttermilk Cornbread (half with Jalapenos for Adam)

  • 1/4 pound butter
  • 2/3 cup white sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  1. Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
  2. Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
  3. Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
The only modification I threw in there was that I added 1/4 cup shredded cheese and one diced jalapeno in half for Adam.
